Ingredient List 🧾

Here’s everything you’ll need to make your Sticky Chelsea Buns Loaf—a lovely soft, sticky treat packed with fruity goodness and a hint of warming cinnamon. Getting your ingredients just right is a game-changer for this recipe, so I’ll walk you through the list with clear measurements and handy tips.

  • Flour: 500g (about 4 cups) — plain or strong bread flour works well here. Strong flour has more gluten and helps the dough rise nicely, giving you that soft, chewy crumb.
  • Yeast: 7g (1 packet or 2¼ tsp) — instant yeast is easiest, but you can use fresh yeast if that’s what you have.
  • Sugar: 100g (½ cup) — caster sugar is perfect for sweetness without grittiness.
  • Butter: 75g (5 tbsp) — softened for the dough, plus extra for greasing. Unsalted is best so you can control the saltiness.
  • Milk: 250ml (1 cup) — warm, not hot. This feeds the yeast and makes the dough tender.
  • Dried fruits: 150g (1 cup) — a mix like raisins, sultanas, or chopped dried apricots. Feel free to swap for other dried fruits like cranberries or cherries if you prefer.
  • Cinnamon: 2 tsp — ground cinnamon adds that classic warm spice that takes this loaf to the next level.
  • Egg wash: 1 beaten egg mixed with a splash of water or milk — this will give your buns a shiny, golden finish.
  • Glaze: A simple icing sugar glaze—about 100g icing sugar mixed with a spoonful of water or lemon juice to a smooth consistency. It adds just the right sticky sweet finish.

If you need to avoid dairy, use a plant-based milk and vegan butter substitute, and replace the egg wash with a milk alternative or brush with syrup for gloss. Trust me on this one—it still turns out delicious!

Now you’re all set with your ingredients. Keep them prepped and close by—it makes the whole baking process smooth and enjoyable.

Step-by-Step Instructions with Pro Tips 👩‍🍳

Making a Sticky Chelsea Buns Loaf at home is a delightful experience, and I’m here to guide you through every step so you get that perfect soft, sticky loaf filled with sweet dried fruits and cinnamon. Ready? Let’s break it down.

1. Prepare the Dough

Start by mixing your flour, yeast, a pinch of sugar, and warm milk to create the base of your dough. The warmth of the milk is key—it wakes up the yeast without killing it. Use water that feels like a cosy bath, around 37°C (98°F). Add softened butter and bring everything together to form a smooth dough.

Pro tip: Knead the dough until it’s soft and elastic, about 8-10 minutes. This develops the gluten, which makes your buns wonderfully fluffy.

2. Roll Out and Fill

Once your dough has doubled in size (give it about an hour in a warm spot), punch it down gently and roll it into a rectangle. Sprinkle your dried fruits and a generous layer of cinnamon over the surface. Don’t be shy with the filling—the flavours need to shine through every bite.

Pro tip: Use a light dusting of flour on your rolling surface to prevent sticking, but not so much that the dough dries out.

3. Shape and Proof

Roll the dough tightly into a log and slice it into equal portions to fit snugly in your loaf tin. Place them close together—this “hugging” helps them rise upwards and create soft sides.

Pro tip: Let your rolls proof again for 30-45 minutes until puffy. While that’s happening, preheat your oven to 180°C (350°F) so it’s ready to bake right away.

4. Bake and Glaze

Give the buns an egg wash before baking – this creates that beautiful golden sheen. Bake for 25-30 minutes, watching closely towards the end. You’re aiming for a deep golden colour and a slightly sticky top.

Pro tip: As soon as the buns come out, brush them generously with your glaze to get that sticky, glossy finish that makes this loaf a real showstopper.

Following these steps carefully will help you create a Sticky Chelsea Buns Loaf that’s soft, sweet, and absolutely moreish. Trust me on this one—each stage builds towards that perfect balance of fluffy and sticky, with flavours that keep you coming back for more.

Recipe Variations & Serving Suggestions 🍽️

The Sticky Chelsea Buns Loaf is a charming treat with its soft dough, fruity filling, and sweet glaze—but there’s plenty of room to make it your own. Feeling adventurous? Swap out the dried fruits for your favourite nuts, like chopped pecans or walnuts, to add a delightful crunch. Or, if you prefer a more tangy twist, try mixing in some dried cranberries or chopped apricots instead of the usual raisins and sultanas. Cinnamon isn’t the only spice that works wonders here—adding a pinch of nutmeg or mixed spice can take the flavour to the next level. For those watching their sugar intake, lightly drizzle the glaze or replace it with a natural honey glaze to keep things on the lighter side.

Now, here’s the fun part for serving: your Sticky Chelsea Buns Loaf is perfect warm and fresh from the oven, but it’s also a game-changer when gently toasted. Pop a slice under the grill or in the toaster and spread a little butter or cream cheese on top—trust me on this one, it’s a true delight. It pairs beautifully with a cup of tea for a cosy afternoon treat or can be sliced thick for a brunch spread alongside fresh fruit and yoghurt.

If you have leftovers, don’t worry—they keep well! Store the loaf wrapped tightly in cling film or an airtight container at room temperature for up to two days. For longer freshness, pop it in the fridge for up to a week; just bring it back to room temperature before serving or give it a quick warm-up in the oven or microwave. Reheating gently keeps the buns soft and sticky, just like when you first enjoyed them.

Why This Recipe Works ✔️

This Sticky Chelsea Buns Loaf is a bit of a game-changer in the world of sweet bakes. What makes it really shine is the way the ingredients and techniques come together to create that perfect soft, sticky texture you crave. The yeast works its magic by gently fermenting the dough, giving you a light and fluffy crumb — not to mention that subtle, tangy depth of flavour you can’t get from baking powder alone.

The mix of dried fruits and cinnamon inside adds layers of warmth and sweetness that spread evenly throughout the loaf. Trust me on this one: soaking the dried fruit slightly before adding it helps them stay plump and juicy, which takes the bite to the next level. Meanwhile, the butter folded into the dough enriches it, making every mouthful feel indulgent without being heavy.

That finishing touch of the sweet glaze isn’t just for looks — it locks in moisture and adds a shiny, sticky surface that’s almost irresistible. Brushing the loaf with an egg wash before baking helps it develop a gorgeous golden colour. All these details, tested and perfected, mean this recipe isn’t just a tasty treat. It’s a reliable crowd-pleaser that’s bound to impress whenever you serve it.
